For now, I wanted to share a super yummy and super easy recipe with you. I don’t know how the weather’s been by you, but out here it’s just been hot. Well I should say the 80’s here is hot because of all the humidity, and no one has air conditioning in the house. If you’re outside, things feel pretty good, so I’ve been coming up with a lot of ways to be outside recently. We play tennis, go on walks, eat frozen yogurt, go to the farmer’s market, grill, and take advantage of our new patio set! So so nice to have a patio set, we were a little worried because the prices have been so high on these things, but since it’s the end of the ‘selling season’ prices dropped way down and we were able to pick this up for 50% off! So now is the perfect time to get out there and find some outdoor furniture 🙂
Anyways, back to grilling, and farmer’s markets. Have you been to yours yet? They are amazing! Berries are in season, veggies are everywhere, and if you are lucky to be in a big foodie area like me, your farmer’s market is packed with a little bit of everything like a local bakery, rotisserie meats, fish, jams, beauty products, and flowers too. Seriously, go check out your farmer’s market! They will have different things every week too, so it’ll never get old. So many people out here are really into fresh and local ingredients, so they buy nearly all of their food at the farmer’s markets. Oh, and here’s a trick. If you go the last half hour you can make some amazing deals. Like 20 plums for a $1 🙂 I’ll be bringing you more from my local farmer’s markets (yes there’s about 5 near me) as the summer goes, But for now, I bring you Pizza!…
Yummy, fresh, cheesy pizza, hot off the grill!
Grilled Veggie Pizza (with sausage)
Grill up your favorite veggies with a dash of olive oil, throw on top of your favorite crust and grill for 10 minutes.
1 Large Pizza Crust
1 Red Onion
1 Green Pepper
1 Large Portobello Mushroom
1 Link Italian Sausage
1 Round Fresh Mozzarella
3 Tbs Favorite Spaghetti Sauce (not chunky, the thinner the better)
1 Clove Minced Garlic
Slice your veggies into large pieces for grilling. (Cut your onion into rounds, and your bell pepper into quarters). Drizzle all of your veggies with some olive oil, and throw onto high heat on the grill, close the cover while cooking, flipping once. Allow for the veggies to char a bit on each side (about 3-5 minutes per side).
While your veggies are grilling prepare your crust, with a few tablespoons of tomato sauce, when it comes to pizza, less is more. This is also when I bring out a cutting board to dice those veggies when they’re done, and bring out the fresh cheese. You can use shredded mozzarella, but there’s just something so good about fresh mozzarella, it melts beautifully and has an amazing mild flavor, that just luls you to sleep on pillows of cheesy goodness.
Once your veggies and sausage (optional, my hubby wouldn’t have it any other way, but I did use chicken suasage!) are lovely charred and cooked, remove from grill and dice for your pizza. Turn one half of your grill to low heat, and leave the other half on high, close the cover. Toppings should be used sparingly as well to ensure you don’t overload your pizza and everything cooks evenly. Try not to use more than 3-4 toppings (plus cheese).
When you’re pizza is all dressed, if you’re using fresh mozzarella, a dash of kosher salt really makes the cheese and veggies sing, so throw a little over the top and then place the pizza on over the low heated half of the grill. Close the lid, and let your grill do the rest. Once or twice during cooking turn the pizza if your crust begins to get too dark on one side. If your crust seems done but your cheese isn’t quite melted, turn off the low heat on the half of the grill that the pizza is on, leave the other half on high and close the lid to finish melting. Your pizza will be done in about 10 minutes give or take a few depending on the crust you use. A thin crust will cook much faster (6-10 minutes), and that’s what I enjoy using. If you don’t trust your grill to cook pizza -no problem- just throw it in the oven. So good, so fresh, so tasty 🙂 I hope you try it and love it, and have a great grillin’ weekend!
