Sweet and Spicy Bacon Chipotle Chocolate Cake!!!

A man’s dream come true (or woman’s)! Oh yes, we did throw all of the rules out the window on this one! This moist cake is coupled perfectly with just enough spicy, just enough sweet, and some wonderfully smokey bacon, you won’t want to stop eating it! Don’t be discouraged by the heat, this is not spicy at all. I normally do not like spicy and savory in my desserts. ‘Give me more sugar!’ I usually say, but today I can totally make an exception! Which my husband loves, because he suffers from a culinary disease I like to call ‘Con-fusion.’ Meaning, the often mistaken fusion of flavors that should not be placed together 🙂 Well honey this one’s for you! (And me, and all of you… so so good!)

We recently made our Strawberry Chipotle Jam, but desperately needed a vehicle with which to eat it. And boy, let me tell you, what we came up with is ridiculous. I mean it really shouldn’t be allowed to exist! It’s not spicy at all. One bite, and you’ll taste the moist -yet light- chocolate cake with a hint of cinnamon. Then you’ll experience the slight tingle of chipotle, quickly balanced by the strawberry and chocolate from the sauce. And last you’ll tickle your taste buds with the smokey bacon that adds the slightest hint of salt bringing out the sweet and spicy lingering flavors still present on your tongue. Oh my, this experience can really only be matched by a handful of the greatest days in your life… Ahaha, alright I’m exaggerating a little, but seriously the flavors here are incredible! This was the perfect early father’s day treat for my Dad, who had 2 pieces of cake and asked for 3 times the amount of bacon suggested for each of his pieces -I think he liked it. And I think you will too, so here it is:

Bacon Chipotle Chocolate Cake

This Texas Sheet Cake is amazing by itself, topped with buttercream frosting and shredded coconut, or lovingly cut out and drizzled with chocolate strawberry chipotle sauce and bacon! (I’m feeling like a mad scientist now, bwahaha!)
Ingredients

Chocolate Texas Sheet Cake

1 Cup Butter
1 Cup Water
1/4 Cup plus 2 Tbs. Dark Cocoa
2 Cups Sugar
2 Cups Flour
1/2 tsp Salt
1 tsp. Baking Soda
1/2 tsp. Cinnamon
2 eggs (beaten)
1/2 Cup Sour Cream
1 1/2 tsp. Vanilla

Directions:
Prepare the Sheet Cake as follows. See toppings recipes and suggestions below.
1. Preheat oven to 350 degrees.
2. In a microwave safe large mixing bowl, or a large pot over medium heat combine the water, butter, and cocoa together until melted and completely combined, you do not have to boil. Remove from heat.
3. In a separate bowl combine the sugar, flour, salt, baking soda, and cinnamon thoroughly. Slowly whisk the dry ingredients into the warm cocoa mixture making sure to break up any lumps.
4. In another bowl beat the eggs, sour cream, and vanilla together. Then stir this into your batter.
5. Spray a jelly roll pan or a couple of large cake sheets and fill (for cake pans fill just over an inch high), leaving about an inch to rise. Bake for 20 minutes or until a toothpick inserted the middle pulls out clean. Let cool in pan while you prepare the topping of your choice!

Strawberry-Chipotle Chocolate Sauce

1/2 Cup Strawberry Chipotle Jam (could use strawberry or raspberry jam as well)
4 tsp. Semi-Sweet Chocolate Chips

Bacon for Topping

6-8 Strips of Bacon (pan or oven fried till crisp)


While the cake is cooling, microwave the jam and chocolate chips together in 30 second increments stirring until smooth. Break the Bacon into 2 inch pieces. Then we used a circle cookie cutter to make cake rounds once the cake is completely cooled. You can cut the cake however you like. We topped the cake with sauce and pressed the bacon into the center and served.

Tip: This sheet cake recipe will make a lot of cake! We had nearly half of the cake left over the next day. So if you’re not in the mood for all of that intense flavor, try something a bit more simple. We cut the cake into large rectangles and frosted butter cream frosting and a sprinkling of coconut in between the layers as we stacked the rectangles together to create a large towering cake. That was sweet and rich -a completely different flavor than before.

Mel crushed some Oreos over the top of this cake to add some color, it was a great dessert for her party!
