Kiss Me I’m Irish

These very green, very sweet, and very yummy little cookies came from my longing to create something new and fun for March 17th, to ring in St. Patrick’s Day and the launch of our first eBook!

It seemed fitting for the very Irish Brady Girls to start our new adventure with an ode to our heritage and a display of our vastly different, at times crazy, and always funny personalities. We will be posting some fun, some traditional, and some new recipes this week, and hope you will join us!

To kick off the week, here’s a taste of a fun recipe that everyone in your family can enjoy. Have the kids help make these emerald beauties and they’ll be even more fun to eat! I mean, the dough does look like playdough after all.

Kiss Me I’m Irish Cookies

I’m sure some of you have seen similar cookies before, usually peanut butter cookies with a Kiss on top, but I bet none of you have seen these! No Peanut Butter here, we make a stiff almost chocolate chip cookie dough, leave out the chips, and top with Kisses!
½ Cup Butter
½ Cup Brown Sugar
¼ Cup Sugar
1 tsp. Vanilla
1 Egg
8 Drops Green Food Coloring
1 ¼ Cups Flour
1 tsp. Baking Powder
¼ tsp. Salt
1 Bottle green decorating sugar (you’ll need about ¼ cup)
18 Hershey’s Kisses (unwrapped)

1. Preheat oven to 350° F.
2. Cream butter and sugars together until light and fluffy. Continue to mix and add the vanilla and egg. Mix until thoroughly combined. Then, 2 drops at a time, add your food coloring. I used McCormick’s regular liquid coloring and found 6-8 drops to give me a nice light green color. Scrape down the sides of your bowl and make sure all of the color and ingredients are well incorporated.
3. Mix in the flour, baking powder and salt. Refrigerate dough for approx. 30 minutes.
4. Once the dough has had time in the refrigerator it will be easier to roll. Scoop out about 1” size dough balls. Roll the cookie balls in the green sugar on a plate, and then place on the cookie sheet 2” apart.

5. Bake the cookies at 350 for 10 minutes. As soon as you pull them out of the oven sink an unwrapped Kiss into the center of each cookie. Allow to cool on the cookie sheet for a couple minutes before moving to a rack or plate.

Makes: Approx. 1 ½ dozen cookies
Time: Approx. 1 hour
These are perfect cookies for your kids to bring to school and share with their friends for St. Patrick’s Day! Enjoy!
